When shouldn't you grind your welds?

Grinding a weld sucks, I prefer to polish over them with a balloon wheel to smooth them out rather than grind them smooth, gives me a little more control. But this is all for SS not carbon. I'm an elitest mofo and generally don't have to give two craps about the mild/carbon steel coming through my area.
